Bevog — Old apple varieties for juice production
Description
As part of the project Description of Fruitgen Resources (BEVOG, NAP 03-21), more than 450 apple juices were produced from 2007 to 2010 from 2007 to 2010. The project manager was FRUCTUS. The project was carried out at Agroscope in Wädenswil. The juice samples were analysed both chemically and sensorically. The laboratory analysis determined the content of various sugar types (glucose, fructose, sucrose) and sugar alcohol sorbitol. In addition, the antioxidant potential and the titrierable acid were also determined. For the sensory description, the juice samples of two groups were assessed according to the internationally common 20-point scheme. A maximum of 5 points are awarded for appearance (colour, intensity, clarification, truss), smell (purity, aroma, fruit and intensity), taste (purity and fullness, aromas, fruit and intensity) and overall impression (harmony)
